How to Rehydrate....

"What do I do with Freeze-dried or Dehydrated do I rehydrate them and use them?"  Traditionally, you cover them with water and let them stand until they are rehydrated.  The time it takes varies upon the density and size of the pieces of food.  It can vary between a few minutes to an hour or more.  However, boiling them helps move it along in soups and stews.

Here are some helpful tips:

Reconstituting Dried Foods

  • The lower the moisture content the longer to rehydrate

  • Blanched foods reconstitute faster

  • Smaller pieces reconstitute faster

  • Hard water takes longer

  • Boiling water shortens the time

  • Add salt, sugar, seasonings after the food is fully rehydrated

  • Most dried fruits vegetables measure ½ as much as when they are fresh.
